What charcoal should a yakiniku or wagyu restaurant use?

A beef restaurant needs two things ordinary charcoal cannot deliver together: heat strong enough to sear immediately, and a clean burn that does not mask the aroma of the fat.

How many pieces does one yakiniku grill use, and how long does it last?

In real service, one grill uses about 5 pieces and lasts roughly 1.5 hours.

That is on a table-embedded grill with extraction, and yakiniku restaurants run very strong extraction to keep smoke out of the dining room. So this figure is shorter than the lab burn time, because more air through the charcoal means a faster burn.

A grill with less airflow will hold longer. For contrast, low-heat street grilling uses about 1 kg of charcoal for roughly 2 hours of continuous cooking.

How does white binchotan differ from briquettes?

Does charcoal quality really affect the taste of the beef?

It does, and nowhere more visibly than with beef.

Charcoal still holding moisture or volatile matter releases smoke that settles on the surface of the meat and masks the aroma of the fat. Charcoal carbonised to high fixed carbon radiates heat with almost no smoke, giving a well-charred crust without a sooty note.

That is why beef restaurants accept a higher charcoal cost than other formats — guests notice the difference even when they cannot name it.
